Here are some examples of simple meals I keep in m Here are some examples of simple meals I keep in my meal prep rotation so I can save money and eat healthier 

1. I make my dog meat and rice every week and I use the rice to make my dish (since I'm already cooking it. Here I added sauteed bell pepper, onion, garlic and pineapple teriyaki chicken meatballs I buy in bulk at Costco. 
2. Those same pineapple teriyaki chicken meatballs with sauteed zucchini 
3. Salad! I like to buy spring mix and I try to eat one bowl everyday with olive oil and balsamic vinegar for dressing. I will usually eat my bowl of salad greens while dinner is cooking.
4. Ham and cheese rolled up in a gluten free puff pastry and baked for 20 minutes 
5. Beer battered fish 🐟 (it's actually very easy and quick)
6. Meatloaf
7. Egg roll in a bowl. I usually buy cole slaw mix but the store was out so I grabbed this kimchi salad, sauteed it with an egg, added ginger and garlic and mixed with the rice and meat I make for my doggo 
8. I keep Kevin's on hand, always! The flavors are amazing, they're available at every grocery store but Costco has the best price, and they take five minutes to prepare. 

All these meals are easy and quick prep and less than 30 minutes cook time. Having easy, flavorful meals on hand helps me save money because I'm not eating out and ensures I'm eating more nutrient dense foods so my body has everything it needs to get through the day.

The ski season is over for most of the United Stat The ski season is over for most of the United States but we still have a couple more weeks here in Colorado!

I was so focused this season on improving my riding to pass my AASI certification exam and I did! I was so focused on riding I let my strength training slide and my body definitely felt it. My quads, hips and back took a beating and I could feel it while it riding. 

Hip extensions help relieve my back pain and decrease tightness in my hips and quads so I love them! Other reasons to love hip extensions include:
-they train the core, glutes, hip flexors and hamstrings which are all important muscles in snowboarding 
-they strengthen the movement pattern we need to push off the board and generate power while riding 
-Improve overall stability and balance 
-reduce risk and severity of injuries 
-for beginners, it's common to keep flexed at the hips and lean forward so training hip extension can help you progress your riding quicker

I got a taste of riding through trees last winter I got a taste of riding through trees last winter in Utah at Brighton. They have some very easy trees, unlike any I've been able to find in Colorado. Most of the "easy" trees I've been able to find here in Colorado still seemed like a big jump in difficulty from groomers. 

I've been focusing on improving my riding this season so I can get certified as a AASI snowboard instructor and I finally felt comfortable trying some of the easy trees off a green groomer at Breck. These trees still feel really tight but it's easy to go in and out of them. 

If you want to ride through the trees I recommend getting comfortable with riding flat, holding a line, and making well-timed, quick small radius turns.

Spent most of the day hiking El Dorado park learni Spent most of the day hiking El Dorado park learning straight airs. 

Slowly but surely getting better! I spent most of the time working on getting more speed and landing straight and flat (if you watch closely I sometimes land heel side heavy and immediately brake). On the last one I managed to pop off the lip a little bit! 

Snowboarding is so funny sometimes, I really felt like I was speeding and getting so much air 🤣

Exciting weekend in Breck! I saw my first moose in Exciting weekend in Breck! I saw my first moose in Breck (and second moose ever)! Rode Peak 6 for the first time (yikes it's steeper than I'm used to but so gorgeous 😍) got new bibs, hit some easy bumps without falling 🤙😊
